Ingredients
- 1 whole chicken (4-5 lbs)
- 4 tbsp butter, softened
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 4 cloves garlic, minced
- 1 lemon, halved
- Salt and black pepper
- 2 cups chicken broth
Instructions
- 1 Preheat oven to 425°F (220°C).
- 2 Mix butter with rosemary, thyme, and garlic.
- 3 Pat chicken dry and rub herb butter under and over the skin.
- 4 Season generously with salt and pepper.
- 5 Place lemon halves inside the cavity.
- 6 Tie legs together with kitchen twine.
- 7 Place chicken in a roasting pan and pour broth around it.
- 8 Roast for 1 hour 15 minutes, basting every 20 minutes.
- 9 Check internal temperature reaches 165°F (74°C).
- 10 Let rest for 15 minutes before carving.
