Herb-Roasted Chicken

Ingredients

  • 1 whole chicken (4-5 lbs)
  • 4 tbsp butter, softened
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • 1 lemon, halved
  • Salt and black pepper
  • 2 cups chicken broth

Instructions

  1. 1 Preheat oven to 425°F (220°C).
  2. 2 Mix butter with rosemary, thyme, and garlic.
  3. 3 Pat chicken dry and rub herb butter under and over the skin.
  4. 4 Season generously with salt and pepper.
  5. 5 Place lemon halves inside the cavity.
  6. 6 Tie legs together with kitchen twine.
  7. 7 Place chicken in a roasting pan and pour broth around it.
  8. 8 Roast for 1 hour 15 minutes, basting every 20 minutes.
  9. 9 Check internal temperature reaches 165°F (74°C).
  10. 10 Let rest for 15 minutes before carving.
